Mixed Grill Skewers with Tzatziki Sauce
Ingredients:
For the skewers:
- 250g Seasoned Mix NZ Beef Mishkak Barbecue Cubes
- 250g Seasoned AUS Lamb Mishkak Barbecue Cubes
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1 red onion, cut into chunks
- Cherry tomatoes
- Wooden or metal skewers
- Olive oil for brushing
- Salt and pepper to taste
For the tzatziki sauce:
- 1 cup Greek yogurt
- 1 cucumber, grated and squeezed to remove excess moisture
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh dill (or 1 teaspoon dried dill)
- Salt and pepper to taste
Instructions:
- Preheat your grill to medium-high heat.
- Thread the Seasoned Mix NZ Beef Mishkak Barbecue Cubes, Seasoned AUS Lamb Mishkak Barbecue Cubes, bell peppers, red onion, and cherry tomatoes onto skewers, alternating between the meats and vegetables.
- Brush the skewers with olive oil and season with salt and pepper.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the meat is cooked to your desired level of doneness and the vegetables are tender and slightly charred.
- While the skewers are cooking, prepare the tzatziki sauce. In a bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, chopped dill, salt, and pepper. Mix well until combined. Adjust seasoning to taste.
- Once the skewers are cooked, remove them from the grill and let them rest for a few minutes.
- Serve the mixed grill skewers hot with the tzatziki sauce on the side for dipping.
